Flax Brownie Muffins

This recipe is the best allergy friendly brownie recipe I have tried. I love using flax seeds for added fiber and omega 3s. This recipe is great as it is but it is also a work in progress. It is rich and dense, almost cake like. For a fudge like texture, make sure not to cook too long. Next time I will make these in a mini muffin tin as they are incredibly dense and rich. Flax Brownie Muffin recipe INGREDIENTS 1 1/2 c. gluten free flour 1 1/2 c. organic coconut sugar 1 c. cocoa powder 1 1/2 t. baking powder 1 t. xanthan gum 1/2 t. sea salt 2/3 c. coconut oil, melted 4 flax eggs (4T. ground flax mixed with 10T. warm water) 2 t. vanilla extract DIRECTIONS Grease muffin tin and preheat oven to 350 degrees. In a small bowl, combine the flax eggs and warm water. Allow this to sit for a few minutes. In a large mixing bowl, combine all of the dry ingredients. Magic Black Bean Brownies

Magic brownies have been a favorite Weight Watchers recipe for many health conscious brownie lovers. The "magic" ingredient is pureed black beans to add fiber and protein. There are so many variations of this recipe. I opted to go for a quick and easy version that can be made with only a few ingredients on hand. Magic Black Bean Brownies Recipe 1 (15 oz.) can of black beans, drained and rinsed 1 t. cinnamon 1 box brownie mix (my favorite is Betty Crocker Ultimate Fudge) 1 banana or 1/4 c. applesauce (optional to add moistness) Preheat the oven to 350 degrees. In a food processor, puree black beans with cinnamon, and banana or applesauce until smooth. Transfer to mixing bowl, and combine with brownie mix. Stir by hand until shiny and mostly lump-free. Pour batter into a greased 8x8 baking pan. Bake for about 30 minutes. Brownies will be rich, moist, and fudgy. Cool before cutting. bon appétit

Irish Mint Brownies

Irish Mint Brownies In honor of St. Patrick's Day tomorrow! Mint Brownie Recipe Brownie: 1 c. butter 4 eggs 2 c. sugar 4 oz. unsweetened chocolate squares 2 tsp. vanilla 1 c. flour Combine ingredients and bake at 350 degrees for 25 minutes. Frosting: 2 c. powdered sugar 1 T. milk 4 T. butter 1/2 t. peppermint 3 drops green food coloring (optional) Spread on cooled brownies. Topping: 4 T. butter 1 (12 oz.) bag of milk chocolate chips Melt & stir until smooth; spread on brownies. **This recipe is extremely rich! I like a hint of mint and more chocolate topping. I would recommend trying chocolate frosting for the topping instead of the melted chocolate chips. This gives the recipe a thick layer of chocolate on top and a more intense chocolate flavor. bon appétit
