Flax Brownie Muffins

This recipe is the best allergy friendly brownie recipe I have tried. I love using flax seeds for added fiber and omega 3s. This recipe is great as it is but it is also a work in progress. It is rich and dense, almost cake like. For a fudge like texture, make sure not to cook too long. Next time I will make these in a mini muffin tin as they are incredibly dense and rich. Flax Brownie Muffin recipe INGREDIENTS 1 1/2 c. gluten free flour 1 1/2 c. organic coconut sugar 1 c. cocoa powder 1 1/2 t. baking powder 1 t. xanthan gum 1/2 t. sea salt 2/3 c. coconut oil, melted 4 flax eggs (4T. ground flax mixed with 10T. warm water) 2 t. vanilla extract DIRECTIONS Grease muffin tin and preheat oven to 350 degrees. In a small bowl, combine the flax eggs and warm water. Allow this to sit for a few minutes. In a large mixing bowl, combine all of the dry ingredients. Magic Cookie Bar Pie

I LOVE this recipe because it takes about 5 minutes and is so simple. I made this around the holidays to give as treats for friends and to bring to holiday gatherings. It made baking so easy and without all the mess. MAGIC COOKIE BAR PIE RECIPE Ingredients 1 prepared graham cracker crust 1 (14oz.) can Sweetened Condensed Milk 2/3 cup butterscotch morsels 1 cup flaked coconut 1 cup semi-sweet chocolate chips Directions Preheat oven to 350 degrees F. Pour entire can of condensed milk evenly into the graham cracker crust.  Layer the remaining ingredients, in the order listed.  Place pie pan on a baking sheet (this will help the pie bake more evenly) and bake for 35 minutes (edges will be bubbly and brown).  Cool to room temperature on a wire rack (for several hours), then serve.

Homemade Brownie Mix

HOMEMADE BROWNIE MIX INGREDIENTS 1/2 cup all-purpose flour 1/4 teaspoon baking powder 1/4 teaspoon salt 1/3 cup cocoa powder 1 cup sugar Wet Ingredients 1/2 cup coconut oil 2 eggs 1 tsp vanilla DIRECTIONS Mix dry ingredients together and place in a jar or container. To Make Brownies Add wet ingredients and Mix until well combined. Grease a 9×13 pan. Spread batter evenly and bake at 350 for 20-25 minutes or until done. NOTES **Gluten Free** Use your favorite  gluten free flour mix  in place of the all purpose flour and add 1 tsp xanthum gum.

Chocolate Brownie Trifle

What I love about trifle is that it always looks great and tastes phenomenal but with minimal effort. I was in a hurry to go to a potluck and came upon this recipe and knew I could not go wrong. Needless to say, I did not leave the potluck with any leftovers. Brownie Trifle Recipe INGREDIENTS 1 (19.8 ounce) package brownie mix 1 (3.9 ounce) package instant chocolate pudding mix 1/2 cup water 1 (14 ounce) can sweetened condensed milk 1 (8 ounce) container frozen whipped topping, thawed 1 (12 ounce) container frozen whipped topping, thawed 1 (1.5 ounce) bar chocolate candy DIRECTIONS 1. Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares. 2. In a large bowl, combine pudding mix, water, and sweetened condensed milk. Mix until smooth, then fold in 8 ounce container of whipped topping until no streaks remain. 3. Blueberry Crumble

What I love about blueberry crumble is that it is such a quick recipe. There are so many variations you can make and it will always turn out amazing! I love to serve it warm out of the oven with a scoop of vanilla ice cream. Blueberry Crumble Recipe BLUEBERRY FILLING: 2 pints, (2-3 cups) blueberries, fresh or frozen 1/2 cup sugar zest of 1/2 lemon FOR THE TOPPING: 1 cup flour 1 cup sugar 1 t. baking powder 1/2 t. salt 1 whole egg beaten 1/2 cup melted unsalted butter DIRECTIONS Preheat the oven to 350 degrees. Toss the berries with the sugar and lemon zest and place in a 1 quart (9x9) oven safe baking dish. (I used a glass pie pan for mine). In a large bowl, combine the flour, sugar, baking powder, salt, and egg until it resembles coarse breadcrumbs. Cover the berries with the topping and pour melted butter evenly over the top. Mississippi Mud Bars Recipe INGREDIENTS 2 cubes margarine 1/3 c. cocoa 2 c. sugar 3 eggs 1/2 t. salt 1 1/2 c. flour 1 1/2 t. baking powder 1 c. nuts 1 t. vanilla DIRECTIONS Mix ingredients. Pour into 9x13 pan. Bake at 350 degrees for 30 minutes. Spread with a jar of marshmallow cream. Cool in pan & then apply icing. Bliss ... Euphoria ... Utter Perfection ... Need I say more? Nutella Nanaimo Bars INGREDIENTS 2 sticks Salted Butter, divided 1/2 cup granulated sugar 5 T. Cocoa 1 large egg, beaten 1- 1/4 cup graham cracker crumbs 1 c. shredded coconut 1/2 c. skinned toasted hazelnuts, chopped 3 oz. Nutella 6 oz. powdered sugar 4 oz. bittersweet chocolate DIRECTIONS 1. For the bottom layer: Melt 1 stick butter, granulated sugar, and cocoa on on stove. Add egg and stir to cook until the mixture is thick enough to coat the back of a spoon. Remove from heat. Stir in crumbs, nuts, and coconut. Press firmly into an ungreased 10X6 pan. 2. For the middle layer: Combine Nutella with 6 Tablespoons of softened butter until thoroughly combined. This recipes is suitable for a raw foods, vegan, sugar-free, or gluten-free diet. Enjoy! Super Healthy Fudge Bites 1 cup Almond butter 1/2 cup Cacao Powder (or cocoa) 1/2 cup Agave nectar 1/2 cup Walnuts, chopped (optional) 1 dash of Cinnamon 1 teaspoon pure Vanilla Combine all ingredients except for walnuts. This recipe comes from my best friend Paula ! Words cannot describe how delicious this tastes! Paula's makes this ever year for Mother's Day brunch and Christmas Day brunch. It can be served for breakfast but tastes much more like a sinfully scrumptious dessert. Crème Brûlée French Toast recipe INGREDIENTS 1/2 cup butter 1 cup packed brown sugar 2 tablespoon corn syrup 1 loaf texas toast 5 eggs 1 1/2 cups half-and-half 1/4 teaspoon salt 1 teaspoon vanilla (i added chopped pecans) syrup butter: 1 1/2 cups butter 3 cups maple syrup melt together and serve over toast. These are rice krispie bars on crack! I cannot get enough! Rice Krispies Chocolate Bars 1 c. sugar 1 c. Karo syrup 5 c. Rice Krispies 1 c. peanut butter 1 c. chocolate chips 1 c. butterscotch chips Bring sugar & Karo to a boil. Take off heat and add peanut butter. Mix in Rice Krispies. Spread in 9x13 greased pan. This is a nice side dish or dessert for a potluck or picnic. I love the sweet creamy flavor mixed with the savory and salty pretzels! Pretzel Dessert Crust: 2 cups crushed pretzels 3/4 cups butter, melted 2 T. sugar Filling: 1 (8 oz.) pkg. cream cheese, softened 1 cup sugar 1 (8 oz.) container whipped topping Topping: 1 (6 oz.) pkg. strawberry gelatin 2 cups boiling water 1/2 cup cold water Directions: 1. In a large bowl combine pretzels, butter, and sugar. Press into the bottom of an ungreased 9x13 inch baking pan. Bake at 350 degrees for 10 minutes. Cool completely. 2. In a large mixing bowl, beat cream cheese and sugar until smooth. Stir in whipped topping. Spread over pretzel crust. Cover and refrigerate until chilled. 3. Fruit Dessert Pizza INGREDIENTS * 1 (18 ounce) package refrigerated sugar cookie dough * 1 (7 ounce) jar marshmallow creme * 1 (8 ounce) package cream cheese, softened * kiwi, strawberries, blueberry, pineapple, and banana slices DIRECTIONS 1. Preheat oven to 350 degrees F. 2. On an ungreased medium baking sheet, smooth the refrigerated sugar cookie dough into a single layer approximately 1/4 inch thick. Bake in the preheated oven 10 minutes, or until edges are lightly browned and center is no longer doughy. 3. In a medium bowl, blend the marshmallow creme and cream cheese. Spread the mixture over the baked crust. Chill in the refrigerator until serving. *Refrigerate about 5 hours **Top with kiwi, strawberries, blueberries, banana, and pineapple slices.

This is such an easy and yummy recipe. I prefer this recipe cold after it has been refrigerated after one day. Others prefer it served warm out of the oven. It almost tastes like cinnamon rolls with cream cheese icing. Sopapilla Cheesecake Bars INGREDIENTS * 2 (8 ounce) packages cream cheese, softened * 1 cup white sugar * 1 egg yolk * 1 teaspoon vanilla extract * 2 (8 ounce) packages refrigerated crescent rolls * 1/4 cup white sugar * 1 teaspoon ground cinnamon DIRECTIONS 1. Preheat oven to 350 degrees F. Lightly grease a 9x13 inch pan. 2. In a medium bowl, cream together the cream cheese and 1 cup sugar until smooth. Stir in the egg yolk and vanilla. Unwrap one package of crescent rolls and cover the bottom of the prepared pan with the unrolled crescents, pressing the seams together to seal. Spread the cream cheese mixture over the crescents. Famous Carrot Cake INGREDIENTS 3 eggs 3/4 cup buttermilk 3/4 cup vegetable oil 1 1/2 cups white sugar 2 teaspoons vanilla extract 2 teaspoons ground cinnamon 1/4 teaspoon salt 2 cups all-purpose flour 2 teaspoons baking soda 3 cups shredded carrots 1 cup flaked coconut 1 cup chopped walnuts 1 (8 ounce) can crushed pineapple with juice lemon zest DIRECTIONS 1. Preheat oven to 350 degrees F. Grease and flour an 8x12 inch pan. 2. In a medium bowl, sift together flour, baking soda, salt and cinnamon. Set aside. 3. In a large bowl, combine eggs, buttermilk, oil, sugar and vanilla. Mix well. Add flour mixture and mix well. 4. In a medium bowl, combine shredded carrots, coconut, walnuts, and pineapple. 5. Using a large wooden spoon or a very heavy whisk, add carrot mixture to batter and fold in well. 6. Pour into prepared 8x12 inch pan, and bake at 350 degrees F for 1 hour.
