Coco Loco Energy Balls

This recipe is incredibly easy to make and tastes even better than Enjoy Life brand Coco Loco bars. Coco Loco Energy Balls Recipe INGREDIENTS 3/4 cup almond butter 1/4 cup pure maple syrup 3/4 cup shredded coconut 3/4 cup gluten free rolled oats 1/4 cup ground flaxseed 1/4 cup cocoa puffed rice cereal (we use One Degree brand) pinch of sea salt 1 t. melted coconut oil 1/8 cup chocolate chips (we use Enjoy Life brand dark chocolate morsels) 1 t. vanilla DIRECTIONS Combine almond butter and maple syrup in the food processor. Add the remaining ingredients until ingredients are mostly smooth. Use a cookie scoop to make balls. If your batch is too dry you can add a teaspoon of water or more coconut oil. You can customize these for some variety by rolling in shredded coconut or m&m's. Store in an airtight container in the refrigerator. ENJOY!

Pecan Pie ballsRecipe INGREDIENTS: 1 1/2 c. Raw pecans 1 c. Pitted dates Pinch salt 3 T. Flax meal 1 t. Vanilla 1 T. Pure maple syrup DIRECTIONS: Combine ingredients in a food processor. Roll into balls. Enjoy!

Almond Butter Protein Balls

Almond Butter Protein Balls Recipe INGREDIENTS 1/2 cup Almond Butter 1/4 cup raw honey 1 scoop vanilla protein powder 1/4 cup water 2 cups gluten free oats 1/4 cup raw pumpkin seeds (optional) 1/4 cup shredded coconut (optional) DIRECTIONS Mix all ingredients together in a food processor and then shape them into 1-inch balls.  Snack serving size is 2 balls. Place left overs in the freezer. These protein balls make awesome snacks to take on outings.

Ultimate Green Smoothie

Ultimate Green Smoothie Recipe INGREDIENTS 2 c. frozen pineapple 2 handfuls spinach or kale 2 handfuls raw cashews juice of 2 limes 1 cup light coconut milk 1 scoop vanilla protein powder DIRECTIONS Blend and Enjoy!

Blender Chocolate Chip Muffins

Blender Muffin Recipe INGREDIENTS 1 cup Almond butter 2 medium sized bananas 2 large eggs 1/2 t. baking soda 1 t. apple cider vinegar 2 T. honey dash of vanilla mini chocolate chips DIRECTIONS Preheat oven to 400 degrees. Lightly grease muffin pan. Blend all of the ingredients except the chocolate chips. (Blend well). Add chocolate chips then pour batter into muffin pan. Bake 13-15 minutes. Cool and serve. Enjoy! (Makes about 8 muffins)

Almond Joy Energy Bites

Almond Joy Energy Bites Recipe INGREDIENTS 1 cup raw almonds 1 cup shredded unsweetened coconut 10-12 medjool dates 1/2 t. vanilla 1 T. coconut oil, melted 2 T. water 1/4 cup chocolate chips DIRECTIONS 1. In a food processor, mix the almonds and coconut until they are fine. 2. Then add dates, coconut, oil, water, and chocolate chips and continue to pulse until you see a dough start to form. 3. Roll into balls and place in the fridge to firm up.  Makes about 12 balls.

Aussie Bites

This recipe is adapted from Costco's Aussie Bites. I made mine Gluten Free and Dairy Free for my children. Enjoy! Aussie Bites Recipe INGREDIENTS 1 3/4 cup gluten free rolled oats 1/4 cup coconut sugar 1/4 cup dried apricots 1/4 cup raisins 1/3 cup ground flaxseed 1/4 cup raw sunflower seeds 1/4 cup unsweetened shredded coconut 1/4 cup cooked quinoa 1/4 t. baking soda 1/4 cup honey 1/2 cup coconut oil 1/2 t. vanilla DIRECTIONS 1. Preheat oven to 350 degrees. Lightly grease a 24 count mini muffin pan. 2. Pour 1 cup of gluten free rolled oats into a food processor. Process for about 1 minute until oats are pulverized. 3. Add in the remaining 3/4 cup rolled oats, sugar, apricots, raisins, flax seed, sunflower seeds, coconut, quinoa, and baking soda. Pulse until apricots and raisins are in small bits. 4. Marshmallow Caramel Popcorn

The only way I can describe this recipe is it tastes like a Rice Krispie Treat meets Caramel Corn. It is just SOOOO YUMMY and addicting that I just had to share! Marshmallow Caramel Popcorn Recipe INGREDIENTS 1 Bag Popcorn 1 Dozen Marshmallows 1 Stick Butter 1/2 c. Brown Sugar 1 t. Vanilla 1 Dash Cinnamon (optional) 2 T. Honey DIRECTIONS Prepare popcorn and set aside in a large bowl. In a saucepan melt butter and combine remaining ingredients. Once marshmallows have melted, pour the sauce into the popcorn bowl. Coat popcorn evenly. Store in an airtight container. bon appétit

Puppy Chow

I have always loved Puppy Chow. I found a healthier version of this old favorite online but we all know it is still sinful, indulgent, and delish! Puppy Chow Recipe 8-9 cups wheat chex 1/2 cup almond butter 1 cup dark chocolate chips 1 Tbsp butter 1 tsp vanilla 1 1/2 cups powdered sugar 1. Put cereal in large bowl. 2. Put chocolate, nut butter, and butter in bowl and heat in microwave until melted, stopping to stir every 10-15 seconds. 3. Once chocolate mixture is smooth, stir in vanilla. 4. Pour chocolate mixture over the cereal and toss until all of cereal is coated. 5. Put cereal in ziploc bag and add sugar. 6. Close bag and shake! 7. Store in refrigerator to cool. bon appétit
