Grandma Janice's high protein blender waffles

Grandma Janice's high protein blender waffles recipe My boys love the gluten free and grain free waffles. I have also used this same recipe to make pancakes! (Note: add a bit of water if it is too thick when you make pancakes) INGREDIENTS 1/2 cup dried cannellini, white kidney, or great Northern beans (can use 1 can of canned beans instead) 2 cups water 1/4 cup apple sauce 1 3/4 cup gluten free oats 2 T. sugar or other sweetener 3/4 T. flaxseed 1 T. baking powder 1 t. vanilla 1 t. salt DIRECTIONS Soak dry beans overnight. Drain beans in the morning or if using canned beans be sure to rinse beans. Add all the ingredients into a blender or food processor. Blend well. Cook for about 8 minutes in a waffle iron. Makes 10  4 inch waffles 2 waffles = 196 calories, 10g protein, 35g carbs, 2g sugar, 3g fat, 6g fiber, 310mg sodium

Puffins

This recipe is a mini muffin/pancake hybrid that my kids love! Puffins Recipe DIRECTIONS Make any batch of pancake batter. Spray a mini muffin pan with cooking spray. Then fill each cup about 3/4 full. Choose your mix ins. Blueberries Strawberry jam Sprinkles Chocolate chips Rainbow chips Cinnamon and sugar Bake these at 350 degrees for about 10 minutes. Enjoy!

Healthy Applesauce Muffins

I am so glad I found this recipe! It is quick and easy AND HEALTHY. My little toddler loves these muffins and I can still feel good about what I am feeding him. Next time I make these I am going to double the recipe and freeze half of the batch. Healthy Applesauce Muffins Recipe INGREDIENTS 1 cup rolled old fashioned oats 1 cup applesauce 1/2 cup milk 1 large egg 1 t. vanilla 4 t. coconut oil 1/2 cup sugar 3/4 cup whole wheat flour 1 t. baking powder 1/2 t. baking soda 1/4 t. salt 1 t. cinnamon cinnamon and sugar mixture DIRECTIONS Preheat oven to 375 degrees F. Grease muffin tin and set aside. In a medium bowl, stir together the oatmeal, applesauce, milk, egg, vanilla, coconut oil, and sugar. Add dry ingredients and stir until just combined to avoid dryness.  Place batter evenly in the muffin tin and sprinkle cinnamon and sugar over the top. Bake for 15-20 minutes. Joe's favorite Blueberry Pancakes

I got two containers of blueberries this week at the grocery store. As much as I love fresh blueberries, after eating one container of blueberries plain, I was ready to use them for something else. This morning I made Joe blueberry pancakes for breakfast. He loved it! Blueberry Pancake recipe INGREDIENTS 1 1/4 cup all-purpose flour 3/4 t. salt 2 1/2 t. baking powder 2 T. sugar 1 egg 1 cup milk 3 T. butter, melted 1/2 cup frozen or fresh blueberries DIRECTIONS In a large bowl, sift together flour, salt, baking powder, and sugar. In a small bowl eat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries.  **Set aside for 2 minutes after mixing to allow the baking powder to activate. Brown on both sides on griddle.  Serve. bon appétit

This recipe comes from my best friend Paula ! Words cannot describe how delicious this tastes! Paula's makes this ever year for Mother's Day brunch and Christmas Day brunch. It can be served for breakfast but tastes much more like a sinfully scrumptious dessert. Crème Brûlée French Toast recipe INGREDIENTS 1/2 cup butter 1 cup packed brown sugar 2 tablespoon corn syrup 1 loaf texas toast 5 eggs 1 1/2 cups half-and-half 1/4 teaspoon salt 1 teaspoon vanilla (i added chopped pecans) syrup butter: 1 1/2 cups butter 3 cups maple syrup melt together and serve over toast. DIRECTIONS in a small saucepan melt butter , brown sugar and corn syrup (and chopped pecans, if you're adding that) over medium heat until smooth, stirring occasionally. pour mixture onto large greased cookie sheet (i cover the cookie sheet with tin foil). spread mixture to cover surface. place 12 slices of texas toast in a single layer to cover pan. mix together eggs , cream , salt and...

These Biscuits and Gravy definitely taste better than they look. Joe loves this recipe for breakfast. I even make it for dinner sometimes. It is really cheap to make and is not very time consuming. Sometimes I even use the gravy recipe and then bake Pillsbury biscuits for convenience.
