Easy Crock Pot Pork

This recipe makes delicious shredded pork that can be used for so many things. We have used it for burrito bowls, tacos, and pulled pork sandwiches.  Easy Crock Pot Pork Recipe INGREDIENTS Pork Shoulder Roast 3 limes 5 cloves minced garlic 1 diced yellow onion Garlic salt, pepper, oregano, cumin DIRECTIONS Place pork in crock pot and season very liberally with seasonings on all sides. Put garlic, onion, and juice of three limes on top. Cook on low for 8 hours. Shred pork with two forks and mix with juices in crock pot. That's it! 

Crock Pot Salsa Verde Chicken

I love this recipe for the simplicity and great flavor. I use the Salsa Verde Chicken as a meal served over rice, as filling in Chicken Quesadillas, or for Enchilada filling. If you make make a little extra, you can use it for 3 different meals during the week. Crock Pot Salsa Verde Chicken Recipe INGREDIENTS 1 1/2 lbs. raw skinless chicken tenders 1/4 t. garlic powder 1/4 t. oregano 1/4 t. cumin salt and pepper, to taste 16 oz. roasted salsa verde (Archer Farms brand) DIRECTIONS Season chicken with garlic powder, oregano, cumin, salt and pepper. Place in the bottom of the slow cooker. Cover with salsa verde, cover and cook on HIGH for 2+ hours. Makes about 3 cups.

Mom's Spaghetti Sauce

I have always loved my mom's spaghetti sauce recipe. There is something familiar and comforting about it that I love. My husband also adores this recipe and asked that I get the exact recipe from my mom. Enjoy! Mom's Spaghetti Sauce Recipe INGREDIENTS 1 T. olive oil 1 lb. hamburger 1 medium onion, diced 1 (26 oz) can Hunt's spaghetti sauce 2 (14 oz) cans diced tomatoes 1 (8 oz) can tomato sauce 1 (6 oz) can tomato paste 1 envelope spaghetti sauce mix 1 t. sugar 2 T. dried parsley flakes 1 T. Italian herbs 1/2 t. garlic powder 2 (8 oz) cans mushrooms Salt and Pepper, to taste DIRECTIONS Brown the hamburger meat with olive oil and onions on a skillet. Drain any extra grease once the meat is fully cooked. Add meat and all other ingredients into a large pot and simmer for about 30 minutes. Crock pot Tortellini Soup

This is one of the best crock pot meals I have ever made. It is super easy and tastes amazing! Crock pot Tortellini Soup Recipe INGREDIENTS 1 (19 oz.) bag frozen Cheese Tortellini 1 small bag of fresh spinach 2 (14.5 oz) cans of Italian Style diced tomatoes, drained 1 block (8 oz) of cream cheese or neufchatel (less fat) 1 lb. of ground sausage or chicken/turkey sausage 4 cups of chicken broth DIRECTIONS Brown the sausage and put all ingredients in crock pot, chunking up the cream cheese.  Cook on low for 4-5 hours. (Keep an eye on your tortellini, it may be done sooner as crock pots can vary in temperature.) Serves 4-6 bon appétit

Penne Pasta and Smoked Sausage Bake

This recipe is one of my husband's favorite recipes.  It is hearty and full of flavor. UPDATE: I recently made this recipe using a can of cream of mushroom soup with roasted garlic instead of just plain cream of mushroom soup. The roasted garlic in the cream of mushroom soup added such a delicious element to the sausage and pasta. I HIGHLY recommend doing this! However, if you don't have the roasted garlic cream of mushroom soup, regular cream of mushroom soup will work fine. Beef Stroganoff

Tonight I was reviewing my dinner making options. I had some ground beef that needed to be used and decided a nice beef stroganoff would do the trick. It makes a good amount of food and allows me to send leftovers with my husband to work. Beef Stroganoff Recipe INGREDIENTS 1/2 (8 oz.) package egg noodles 1 small white onion, chopped 1 pound lean ground beef 1 (8 oz.) container of light sour cream 2 (6 oz.) cans of chopped mushrooms, drain liquid 1 can cream of mushroom soup fresh or dried parsley, to taste 1 dash of cayenne pepper 3 dashes of cumin, or to taste garlic powder, garlic salt & pepper, to taste freshly grated Parmesan cheese (for topping), to taste DIRECTIONS 1. Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8-10 minutes or until al dente; drain. 2. The first time I had this meal was when my sister in law made it. I have made it ever since! It makes such a goopy chicken that I just love! Chicken Supreme INGREDIENTS 4-6 chicken breasts 1 carton sour cream 4-6 slices swiss cheese 1 can cream of chicken soup 1 box croutons 1/4 cup butter, melted DIRECTIONS Place chicken breasts in a 9x13 pan. Cover each piece with a swiss cheese slice. Combine cream of chicken soup and sour cream. Spread mixture over chicken. Crush croutons and combine with melted butter. Sprinkle over sour cream mixture. Bake at 350 degrees for 45 minutes or until juices run clear. Serve over rice. bon appétit

Easy Lasagna

This recipe is easy because you don't have to cook the lasagna noodles before baking the lasagna. After browning the beef you just layer ingredients and bake! Easy Lasagna INGREDIENTS 1 pound ground beef 1 (32 oz.) spaghetti sauce 1 1/2 c. water 2 c. cottage cheese 3 c. cottage cheese 1/2 c. parmesan cheese 8 oz. uncooked lasagna noodles 2 eggs 1/4 c. chopped parsley 1 t. salt 1/4 t. pepper DIRECTIONS Brown beef; drain off fat. Add sauce and water. Simmer about 10 minutes. Combine remaining ingredients except lasagna, for filling. Pour about 1 c. sauce on bottom of 9x13 baking pan. Layer 3 pieces of uncooked lasagna over sauce. Cover with 1 1/2 c. sauce. Spread 1/2 of cheese filling over sauce. Repeat layers of lasagna, sauce, and cheese filling. These Biscuits and Gravy definitely taste better than they look. Joe loves this recipe for breakfast. I even make it for dinner sometimes. It is really cheap to make and is not very time consuming. Sometimes I even use the gravy recipe and then bake Pillsbury biscuits for convenience. This has been a family favorite since I was a kid. It is quick, easy, and tasty for a casual family meal. Taco Pie INGREDIENTS 1 (8 ounce) package refrigerated crescent rolls 1 pound ground beef 2 T. cumin 1/2 t. cayenne pepper 1/2 onion, chopped 1 can sliced black olives 1 c. sour cream 2 cups shredded Mexican-style cheese blend Tortilla chips, crushed DIRECTIONS Preheat oven to 350 degrees F. Lay crescent dough flat on the bottom of a clear glass pie pan. Crush tortilla chips and sprinkle evenly over crescent dough.
