Homemade Oreo Cookies

I have been making homemade Oreo Cookies for years. I typically followed the recipe using a cake mix but recently tried making them completely from scratch that is so light, fluffy, and delectable! I have included both recipes if the cake mix version is more convenient.
Oreo Cookie Recipe from scratch
INGREDIENTS
Cookies:
1 1/4 c. flour
1/2 c. cocoa powder
1/2 t. baking soda
1/4 t. salt
1/2 c. butter, room temperature
1 c. sugar
1 large egg
1 t. vanilla extract
1 1/4 c. semi-sweet chocolate chips (optional)
Frosting:
1/2 c. butter, softened
8 oz. cream cheese, softened
1 t. vanilla
3 1/2 c. powdered sugar
DIRECTIONS
For the cookies:
Preheat oven to 350 degrees. In a medium bowl, sift together flour, cocoa powder, baking soda and salt. In a large bowl, cream together butter and sugar. Beat in egg, followed by vanilla extract. Gradually, with the mixer on low speed, blend in the flour mixture, stopping when no streaks of dry ingredients remain. Stir in chocolate chips (optional).
Place leveled tablespoons of dough, flattened, onto prepared baking sheet. Bake for 8-10 minutes, until cookies begin to crack on the top. Cool for 2 minutes on the baking sheet, then transfer to wire rack to cool completely.
For the frosting:
Cream butter and cream cheese until smooth. Add vanilla and blend. Add sugar, a cup at a time, blending well between each addition.
Pipe frosting onto flat side of one cookie, and top with a second cookie.
Makes about 18 sandwich cookies.

Quick and Easy Oreo Cookie Recipe using a cake mix
1 pkg. Devil's Food chocolate cake mix
2 eggs
1/2 c. vegetable oil
vanilla frosting
Mix dry cake mix, eggs, and oil until well mixed. Roll into balls and place on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes. Let cool and put frosting between cookies.
Frost the cookies using store bought icing.
